Swedish Pancakes: 1/8 c. vegetable oil, 2 eggs, 1 1/4 c. milk, 3/4 c. flour, 1/4 c. sugar, 1/2 t. salt. Mix with a wire whip or mixer. It all depends on how batter comes out. If too runny add more flour a little at a time. If too thick add more milk. Make sure you have a hot oiled pan and pour in enough batter to cover bottom thinly. Pour in and lift pan up and swirl wrist to cover bottom of pan. Cook till sides brown slightly and then loosen with turner and flip to other side to brown. Will brown fairly fast. You know the rest. Enjoy! Mom

I tried the recipe finally and I was delicious! I think I finally got the hang of getting them thin enough and not too puffy...also not burning them and getting the heat just right was more of a science than I knew before.

Mom, could you also post the Porcupine Ball recipe?

Hank & Dawn, Here is the Porcupine Ball Recipe: 1 lbs. ground beef,1/2 c rice,1/2 c. water, 1/2 chopped onion,1 t. salt, 1/4 t. pepper,1/2 t. garlic powder, 1 8oz can tomatoe sauce 1 can water 2 t. worcestershire sauce. Combine first 7 ingredients. Roll into balls and brown. Drain grease add tomatoe sauce, water and worcestshire sauce. Cover and bring to boil and then tirn down to simmer for 45 mins. If you like you can make more sucewith it and then serve meatballs and sauce over rice.
